Perfectly Pleasing Pumpkin Pie

Ingredients
  

KETOLICIOUS PIE CRUST

THE PUMPKIN PIE FILLING

  • 1 can Pumpkin Puree
  • 3/4 cup Coconut Whipping Cream Do not shake the can before opening . Once open, scoop the thick stuff from the top and use as much of the thick portion as you can.
  • 1/4 cup Allulose May add extra sweetener of choice until you get your desired sweetness. (I like to add a dash of monk fruit)
  • 3 tsp Pumpkin Pie Spice
  • 1/4 tsp Salt Real Salt
  • 2 tsp Vanilla Extract Can also work with 1 tsp.

EGG REPLACEMENT -REPLACES 2 EGGS

  • 2 tsp Vegg Baking Mix For a thicker consistency, you may use up to 4 teaspoons.
  • 4 tbsp Olive Oil For thicker consistency, only use 2 tablespoons instead of 4

Instructions
 

PREPARING THE PIE CRUST

  • Preheat your oven to 350°
  • If not already done, press your Ketolicious Pie Crust into your pie dish after you have lined the bottom of the dish with parchment paper.
  • Poke a few holes in the bottom of your pie crust with a fork.

PREPARING YOUR PUMPKIN PIE FILLING

  • In a large bowl, combine all the Pie Filling Ingredients (Not the Egg replacement yet) and combine until it creates a thick, smooth mixture.
  • Taste the mixture and determine if the sweetness suites you. If not, add more sweetener of your choice until you enjoy the taste. (You may add more spices or vanilla too if you wish.)
  • Add the Egg Replacement to the Pie Filling and mix until everything is combined very well.

PREPARING THE PIE

  • Pour the Pumpkin Pie Filling into the Ketolicious Pie Crust
  • Place the pie into the oven and bake at 350° until the filling becomes more firm yet retains its gelatinous quality. This usually takes around 40-60 minutes.
  • If your pie crust begins to burn, cover with foil, reduce the heat to 325° and cook until the pie filling is thoroughly cooked and jiggly but not sunken in.
  • Check regularly on your pie while it is in the oven to prevent burning.
  • Take your pie out of the oven and allow it to cool.
  • That's it! You're ready to enjoy a Perfectly Pleasing Pumpkin Pie!
